ALMOND MEAL CRACKERS

About the Recipe

These grain-free crackers support blood sugar balance and digestion while providing a crunchy, nutrient-dense alternative.

Ingredients

  • 3 cups blanched almond flour

  • 1 ½ tsp sea salt

  • 1 cup sesame seeds

  • 2 large eggs, whisked until frothy

  • 2 tbsp olive oil

Preparation

Step 1: In a large bowl, combine the almond flour, sea salt, sesame seeds, eggs, and oil. Stir until fully blended and a dough forms.


Step 2: Divide the dough evenly into two halves.


Step 3: Line two 12 × 16-inch baking sheets with parchment paper. Place one portion of dough onto each sheet.


Step 4: Cover each dough portion with an additional sheet of parchment paper. Roll the dough between the parchment sheets until it is about 1/8 inch thick and evenly spread across the baking sheet.


Step 5: Remove the top parchment layer and use a knife or pizza cutter to cut the dough into 2-inch squares.


Step 6: Bake at 350°F for 10–12 minutes, or until the crackers are lightly golden brown.

Substitutions

• Replace sesame seeds with flax or sunflower seeds
• Add herbs or spices for flavor variation
