These simple grain-free tortillas support digestion and blood sugar stability.

Ingredients
2 large eggs
1 tsp melted ghee (or melted coconut oil)
1 tbsp water
¼ cup arrowroot powder
1 tsp coconut flour
Pinch of sea salt
If making crepes for a sweet recipe, add ¼ tsp vanilla
Preparation
Step 1: Crack the eggs into a medium-sized bowl. Add the melted ghee or coconut oil and water, then whisk until fully combined.
Step 2: Add the dry ingredients to the bowl and beat well until a smooth batter forms.
Step 3: Heat an 8-inch skillet over medium heat. Pour in about one-third of the batter, immediately tilting and rotating the pan to evenly coat the bottom.
Step 4: Cook until the tortilla begins to pull away from the edges, about 1 minute. Flip and cook the second side for another 1 minute.
Step 5: Remove from the pan and repeat with remaining batter. If saving for later, allow tortillas to cool completely before storing.
Substitutions
• Add herbs for savory version
• Use cassava flour instead of arrowroot if needed
