Best enjoyed fresh. Store undressed salad components separately in airtight containers in the refrigerator for up to 1 day. Store the vinaigrette separately for up to 3–4 days and whisk before serving.

About the Recipe

This colorful seasonal salad brings together fresh produce, healthy fats, herbs, and a touch of natural sweetness. It is light, refreshing, and easy to assemble, making it ideal for warm-weather lunches, gatherings, or as a beautiful side dish.

Ingredients

Salad

  • Sliced vine-ripened heirloom tomatoes

  • Halved cherry tomatoes

  • 2–3 peaches, sliced into wedges

  • Fresh cherries, pitted (optional)

  • Watermelon chunks (optional)

  • 2 balls burrata, at room temperature

  • 1/4 cup walnuts or pistachios, chopped

  • Fresh basil, mint, or herbs of choice, sliced


Lemon-Honey Vinaigrette

  • 2 tbsp fresh lemon juice, or juice of 1/2 large lemon, to taste

  • 1 tsp–1 tbsp honey, to taste

  • 1 clove garlic, chopped or pressed

  • 1 tsp lemon zest

  • 1 tsp Dijon mustard

  • 1/3 cup extra virgin olive oil

  • Sea salt and freshly ground black pepper, to taste

Preparation

Step 1: In a small bowl, whisk together the lemon juice, honey, garlic, lemon zest, and Dijon mustard.

Step 2: Slowly pour in the olive oil while whisking continuously until the vinaigrette is emulsified. Season with sea salt and pepper to taste.

Step 3: Arrange the heirloom tomatoes, cherry tomatoes, peaches, and any optional cherries or watermelon on a serving platter.

Step 4: Gently tear or place the burrata throughout the salad.

Step 5: Drizzle with the lemon-honey vinaigrette. Alternatively, use a simple drizzle of olive oil and balsamic glaze.

Step 6: Finish with fresh herbs and chopped walnuts or pistachios. Serve immediately.

Substitutions

nectarines → Swap for peaches.
Use cherries, watermelon, or a combination of seasonal fruit.
Walnuts or pistachios → Swap for pecans or almonds.
Burrata → Omit for a dairy-free version.
The lemon-honey vinaigrette → Use olive oil and balsamic glaze instead.

Dietary Notes

Vegetarian, gluten-free. Can be dairy-free by omitting the burrata. Not strictly keto due to the fruit and honey.
